Shrimp and Pomegranate Salad Paired with Ladron De Guevara de Autor

INGREDIENTS

  • 15-20 Shrimp (serves 2 and a toddler)
  • 1 Pomegranate
  • Organic Spinach/Kale
  • Heirloom Tomato
  • Onion
  • Your Favorite Dressing (Paleo Ranch Dressing)
  • RECIPE

  • Boil Shrimp until White and Red in Color (we used frozen, Peel-On Shrimp)
  • Run under cold water to easily remove Peel
  • Chop Heirloom Tomato
  • Chop Onion
  • Remove pomegranate seeds**
  • Serve on a bed of kale and/or spinach
  • Drizzle 1-2 tablespoon dressing of your choice (we like the Paleo Honey Mustard Dressing from Paleoland.com. See below for Recipe)
  • WINE

  • Ladron De Guevara de Autor (Spanish Wine) of Tradewinds Specialty Imports

    Green Goddess on a Flatbread

    INGREDIENTS

  • Asparagus
  • Flatbread
  • Spinach/Kale
  • Goat Cheese
  • Your favorite Dressing (we like Paleo Honey Mustard Dressing. See below for recipe)
  • RECIPE

  • Clean, Cut & Sauté a handful of Asparagus spears in olive oil
  • Preheat oven to 300 degree Fahrenheit
  • Lay out flatbread (gluten free is our favorite)
  • Cover flatbread with Spinach
  • Layer with cut Asparagus
  • Sprinkle with Goat cheese
  • Drizzle 1-2 tablespoon dressing of your choice (we like the Paleo Honey Mustard Dressing from Paleoland.com. See below for Recipe)
  • Place in oven. (For warm and soft flatbread crust, allow in oven for 6-8 min. For crunchy flatbread, allow in over for 12-15 min)

    INGREDIENTS
    4 tbsp olive oil
    1 tbsp coarse mustard
    1 tbsp Dyon mustard
    1 tbsp lemon juice
    1 tbsp honey
    Celtic sea salt and freshly ground pepper, to taste

    INSTRUCTIONS
    Place all ingredients in a clean glass jar and put an airtight lid on it.
    Now shake :-)
    The oil and lemon juice should be completely blended.
    Store in the fridge (if they separate during storage, just give it another shake again).

    Vegetable Curry

    Curried Vegetables

    Ingredients

    Feeds 2 Adults & 1 Child

    Chickpeas/Garbanzo Beans

    Curry Powder

    1 Onion

    2 Potatoes

    Kale

    Rice

    Quinoa

    Broccoli Salad

  • Slice and Roast potatoes in the oven (20 min cook time)
  • Slice and Sauté 1 onion
  • Add Kale to your Sautéed onion
  • Add 1/2 cup of water to the sauté mix of onion and kale
  • Add Curry powder to your acquired taste
  • Add roasted potatoes to your sautéed mix
  • Add chickpeas/Garbanzo beans (Organic canned, No-Salt added Garbanzo beans)
  • Allow to simmer
  • Serve over a bed of Boccoli Salad, Quinoa or Rice
  • **Can we stored and served cold as well
  •

    The Size of a Real Woman

    As with every fashion week, there is always increased “stir” about body image.  However, I’ve begun  to see a new trend… social media blurbs everywhere popping up discussing the NEW size of a “Real Woman,” … stating the size of A “Real Woman” is a size 6,8,10…. A “Real Woman” has curves… A “Real Woman” looks like “this”, A “Real Woman” looks like “that”… Well, I don’t know how you feel, but I consider myself a “A Real Woman” and I don’t consider myself capable nor want to fit in anyone’s box or definition they’ve created for me or what I should “look like” … aside from “Healthy.”  A Real Woman might have curves, might be a size 14, might be a size 0, or might look like a stick….

    A “Real Woman” is Healthy. (period)

    I believe that’s about the only box I would fit to conform. 

    Several people have contacted me over the past few months, asking about my diet and workout routine during pregnancy and now, post-partum…. my response to many has been, I didn’t have a “diet” or “workout routine” while pregnant… nor do I have one “post-partum”… I simply have a lifestyle. 

    Prior to my pregnancy, I was around a 105lbs (can’t remember exactly)… but I don’t feel I was any less woman at that point. I was thin, but I was healthy – eating clean, running between 3-6 miles a day (not to lose weight but to clear my mind and grab some “Me” time.) After finding out I was pregnant, I continued to exercise throughout my pregnancy. Well into my 6 month of pregnancy, I remained running 3-6 miles daily (doctor approved). We hiked, we walked, we swam, we paddled… The day I went into labor, I was still swimming laps at the pool.  I maintained my style of eating, meaning we continued to eat clean and nutritious. Gaining well over 55 pounds throughout my pregnancy, I never considered myself any more nor any less of a woman at any time….due to the weight I was putting on or my quickly growing “size”.  In fact, I was just as proud of and confident in my body throughout the entire pregnancy as I was walking on the runway.

    Following my pregnancy, I’m not going to lie, I was concerned about what my body was going to look like. How could I not be? … I’d heard from so many people, “You’ll never get your body back,” “You’re always going to have belly pooch,” “Don’t be surprised if people are asking you when you’re due 6 months after you’ve had your baby,” “You’re never going to be able to wear a bikini again.”

    I’m here to tell you… Whether you’ve had a baby or simply just let yourself wane from healthy decisions when it comes to eating and exercising… NOTHING IS IMPOSSIBLE…if you are willing to make healthy eating and exercise a “LIFESTYLE CHOICE.” 

    Lets be honest, there are thousands of diets to help you lose weight, “QUICK without changing your lifestyle… and continuing to eat what you want” and exercise equipment to utilize while sitting on the couch or in front of the TV “so it doesn’t feel like you’re working out.” … I’m sure many of us have tried the diets or the workout machines/videos and have found results… but only temporary results, because the truth of the matter is, YOU CAN”T have lasting results without a change to YOUR LIFESTYLE.

    You can only eat food that is prepared for you, count points, avoid going out and/or certain food groups for so long… and then reality hits, your weight comes back on and its another “failed” diet.  Its about knowing and understanding HOW TO EAT… and lets face it, Knowing how to eat, isn’t common sense. It is something learned. Something that truly does need to be taught.

    Join myself and other “REAL WOMEN  & MEN OF ALL SIZES” as we discover how to LIVE a HEALTHY LIFE… share new healthy recipes, fun exercise ideas (hey exercise doesn’t have to be DONE in the gym! – I don’t even have a gym membership!), and simply encourage one another to make HEALTHIER LIFE DECISIONS. 

    A number doesn’t define me nor make me more or less of a woman.    

    Step outside of the box that so many people are trying to conform to, and seek to create a HEALTHY and LASTING LIFESTYLE!

    What came first, the Chicken or the … Pear?

    Judit’s Dish

    “Judit’s Dish,” is a recipe I acquired from a party we had at my neighbors home this past Halloween!
    Judit (my neighbor) and her husband are both from Hungary, working now in the DC area for the Hungarian Embassy – so we have been blessed to experience many of common dishes made in their home country!!

    What you need: (Serves 4)

    • 4 Pears
    • 1lb. Chicken Breast (or 2 chicken breast fillets)
    • Cheese (the original recipe called for a Smoked cheese, however, after trying this several times, it is in my opinion that the CHEESE of your choice serves best!)
    • A Sui-chef (a husband, friend, or just generally a STRONG girl or guy that can help)

    Recipe


    1. Chop the chicken into small squares (the smaller the better – but do not mince)
    2. Begin to brown your chicken (add a slight amount of olive oil)
    2. Have your Sui-chef cut each Pear in halves. For each half, scoop the middle of the pear out, forming a bowl shape. Place the inside of the pear into a small bowl. (any seeds you find in the pears should be thrown away)
    3. Take the insides of your pears and mix with the Browning chicken.

    4. Lower the heat on the chicken and “Pear-Insides” and allow to simmer slowly for about 20 minutes. The “pear-insides” should be soft and the juices from the pears will be absorbed by the chicken as well.
    5. Place each “scooped out pear halve” on a cookie sheet.

    6. Begin to fill the halves of the pear with your chicken and pear mix.
    7. Place the pears in the oven for approximately 30 min on 130 degree Fahrenheit.
    8. Take the pears out of the oven and shred the cheese of your choice on the top of each pear.
    9. Place back in the oven and allow cheese to melt. (approximately 5-10 min. depending upon the cheese).

    Recipe

    Mango con Kiwi y Yogurt

    What you need: (serves 4 people)
    – 1 large Mango
    -3 kiwi
    -2 cups of yogurt (Vanilla, Greek, whatever your favorite yogurt is)

    Peel 1 large mango and place into blender/magic bullet. Blend. Distribute into 4 small glasses. Peel 3 kiwi and place into blender (ALONE). Blend. Distribute into the 4 small glasses on top of the blended mango. (do not mix in cup). Place a 1/4 cup of yogurt on top of each cup containing the mango and kiwi. Serve.

    Option. This is sweet, however if someone prefers sweeter, sprinkle brown sugar on the top of the yogurt.
